Today it is the trendiest place in town and the perfect venue for a media event put on by Château Clarisse— a rising star from Puisseguin-Saint-Emilion in Bordeaux—and hosted by Didier Le Calvez, Oetker Collection COO and Le Bristol Paris managing director. While the press sampled the wines and food, Le Calvez and his world-renowned consulting winemaker Stéphane Derenoncourt, shared stories and insights into this exciting new estate. In addition to tasting Château Clarisse’s best, the 2011 Cuvée Viechlles Vines, limited to just 250 cases, was poured. The wine and food were simply sensational. Plus the event let us in on a little secret that the chefs at Wally’s, like former owner/foodie/wine expert Steve Wallace really know how to prepare a meal.
