Practicing all activities of winemaking in the vineyard since the age of 19, Stéphane Derenoncourt became Cellar manager of Château Pavie-Macquin, while consulting for other vinyards.

It is essential to tailor the production method to the values and resources of the owner of the vineyard and to work closely with his team to develop that method. My motto? : To make the wine I like to drink – elegant, balanced, and respectful of the fruit.”
The renown of Stéphane Derenoncourt demonstrates clearly that there is no need to be born a winemaker, or have specialized qualifications to do this job with talent. Stéphane’s well-known excellence is born of his passion and diligence.
Stéphane Derenoncourt has assembled a team of eight consultants, formally trained in the last decade. These consultants perform audits for vinyards and chateaux worldwide. Their assignments entail a preliminary and final ‘health check‘ of the soil and fields. The consultants asses and advise on risk-taking, providing reassuring recommendations to the property owners.
For Château Clarisse, consultant Romain Bocchio works hand in hand with the employees to defend the values of our company : keep a curious, focused mind ; observe and experiment ; update winemaking methods while preserving utmost respect for the soil, the vines, the grapes and the wine.
